Mom's Icelandic Chocolate Cake

This is the chocolate cake that we've probably made (an eaten) the most often. Our mother originally got this recipe from our dad's sister decades ago and from then on it became the standard family chocolate cake for all celebrations and special occasions.  It is a really nice and easy chocolate cake, it comes together in just a few minutes and it goes well with any type of frosting and it's also perfect for making easy chocolate cupcakes :)




Icelandic Chocolate cake

2 cups flour
1.5 tsp baking powder
0.5 tsp baking soda
1 teaspoon salt
1.5 cup sugar
200 gr butter
1 cup milk
2 large eggs
2-3 tbsp cocoa powder


Turn on the oven at 175 °C /350°F.

All ingredients, except the eggs, put into a bowl and mixed together in a stand mixer for 2 minutes. Add the in eggs and mix well. Butter two 23 cm cake pans, divide the batter evenly between the two pans and bake for about 35 min or until a pin inserted into the cake comes out clean.

You may also poor the whole batter into one pan but the baking tie will need to be adjusted accordingly.
