Icelandic Dark Rye Bread / Rúgbrauð



Our father is not known for spending a lot of time in the kitchen baking. However, he does make this absolutely delicious sweet rye bread which is a very common type of bread in Iceland.

Mom's Icelandic Chocolate Cake



This is the chocolate cake that we've probably made (an eaten) the most often. Our mother originally got this recipe from our dad's sister decades ago and from then on it became the standard family chocolate cake for all celebrations and special occasions.  It is a really nice and easy chocolate cake, it comes together in just a few minutes and it goes well with any type of frosting and it's also perfect for making easy chocolate cupcakes :)

Icelandic No-Bake Cheesecake





The regular American baked cheese cake has traditionally not been that common in Iceland in my experience. Rather, most cheese cakes are made by whipping together cream cheese, sugar and whipped cream and then freezing the cake. This is our mother's take on this delicious dessert.

Icelandic plokkfiskur (mashed fish)



This dish is a very common dish in Iceland, liked by both children and adults. Somewhat surprisingly though, our own mother never made it when we were growing up but we would occasionally get a taste of it when visiting relatives or friends.
