Icelandic Waffles

This is a recipe from our mother and if you ask us, it's simply the best waffle recipe out there. In Iceland waffles are generally served with whipped cream and some type of jam, most often rhubarb jam (probably because that's pretty much the only fruit that grows in Iceland). In our family we like to use plain syrup (not maple) with them as well, it's a real treat :)




Mom´s Icelandic Waffles 

5 dl (2 cups) flour
4 tsp baking powder
4 tsp sugar
6 tbsp butter, melted
2 eggs
3.75 dl (1.5 cup) milk
salt
A few drops of lemon

The dry ingredients are mixed together. A bit of the milk is then mixed in, then the butter is added, then eggs are stirred in and finally the rest of the milk. A few lumps are quite ok and won't affect the end result :)
